INGREDIENTS
1 kg of large red mullets
1 onion
Juice of 1 lemon
60g of olive oil
Salt and pepper
A few cardamom seeds
Boil the greens in plenty of water. Leave them over medium heat for 6-7 minutes or as long as it takes to eat pleasantly. Strain them and pour them into bowls with iced water and ice cubes to stop the boil and keep them coloured.
Peel the fish and cut it into pieces the size of a large olive. Mix the olive oil with the lemon juice and salt and pepper and add the fish in the mix for about 20 minutes. Place the fish on top of the greens, put some coriander seeds on top and serve.
