
Recipe for Rabbit with oregano
INGREDIENTS FOR 4 PERSONS
• 1 rabbit • 1 cup of vinegar • ½ cup of olive oil • 2 leaves of bay
• 1 dry onion • The juice of 1 lemon • Oregano • Salt, pepper
PREPARATION
Wash the rabbit and cut it into portions. Place the pieces into a deep recipient, pour the vinegar and cover up with water. Add the 2 leaves of bay and the onion. Let marinate for 4 hours and then drain them. Put oil in a pot and sauté the pieces. Pour the lemon juice, sprinkle with salt, pepper, oregano, add 1 cup of water and braise for about 1 hour. The food is very tasty and light. Also, you can roast it in the oven, covered for 1 ½ hour but you should add more water
