Recipe for Savore with must syrup
INGREDIENTS FOR 6-8 PERSONS
• 1kg of small boops boops or whitebait • ½ cup of flour • 1 cup of oil for frying
For the sauce:
• 3tbsp of olive oil • 3 cloves of chopped garlic • 3tbsp of flour • ¼ cup of vinegar
• cup of must syrup • 1 cup of water • 1 teaspoon of sugar • Salt, pepper
PREPARATION
Clean the fish, salt them and let them absorb the salt for a while. Place them in a colander to drain and then batter and fry them. Put them in a shallow platter Brown the garlic in the olive oil and throw the flour. Stir Add slowly the must syrup, vinegar, sugar and stir with a wooden spoon so as to avoid blobbing. If necessary, add water in order to have a fluid sauce and adjust the savor which has to be sweet and sour. As it is hot, pour it on the fish Fish is served hot or cold.VARIATION: Add some rosemary and skip the must syrup.
NOTE: Fish covered with this sauce, could be preserved in times when there were no fridges, therefore farmers or fishermen were taking with them when they had to stay away from home for 2-3 days.
