Recipe for Potato Pie
INGREDIENTS FOR 8-10 PERSONS
• 2 ½kgs of potatoes • 2tbsp of butter •1 big chopped onion • 4 eggs slightly
scrambled • 2 cups of grated cheese (kefalotiri or some other piquant type
of cheese) • 1tbsp of oregano • ½ cup of milk • ½ cup of chopped parsley
4tbsp of olive oil for the pan and the baking • Salt, pepper
PREPARATION
Clean the potatoes well, boil them with their skin until they are done. Drain them Once they are cold, unpeel and pass them from the puree mill. Sauté the onion with the butter for a few minutes and let it get cold. Add all ingredients in the puree mix together with the onion and blend them Coat the pan (or Pyrex) with oil of dimensions 38χ28cm. Spread the mixture and smooth it over so as to be equally thick in all sides. Take a fork and make squares or rhombs on the surface of the pie. Pour some oil on the potato pie and bake for 1h at 200°C until it gets brown Let the pie get cold, cut it and serve.
