Petroma of Tinos is a fresh cheese produced in the cheese factory of the Agricultural Cooperative of Tinos from fresh cows’ milk. After the milk thickens, we press the curd to eliminate its fluids and become dry, which is to “rock”, to become solid.
Petroma is unsalted and it is used as a raw material for the preparation of Kafteri and Tinian cheese.
It is used in pastry and cooking ( sweet and savory pies, skepastes, etc.) and replaces here in Tinos the feta cheese, especially in the Greek salad.
It is the cheese used to make sweet Easter cheese pies, a special traditional dessert that you will find all year round in the patisseries of Tinos and in all the houses of our island during Easter period. Petroma affects both their taste and their appearance.
