Soft table cheese with a compact structure, a sweet taste and white color, in a head shaped cone, weighing about one kilo. It is produced in the cheese factory of the Agricultural Cooperative of Tinos from fresh cows’ whey to which a small amount of cow’s milk is added.
It is a traditional Greek cheese almost similar to Anthotyro. It is consumed fresh, as a table cheese. It is excellent cheese for pies and accompanies excellent fruits and white wine. As it has low salt and fat content, it is very light and it can be consumed by people on a diet.
