Recipe for Rice with artichokes
INGREDIENTS FOR 8-10 PERSONS
• 10 artichokes • ½ cup of olive oil • 1 medium dry chopped onion • 2 fresh chopped onions
• 7 cups of water • 500gr of pilaf rice • 2 lemons • Salt, pepper
PREPARATION
Clean the artichokes, rub with lemon and cut them in small pieces Pour the olive oil into the pot and once warm add the onions and the artichokes. Sauté them and add a cup of water. Lower the heat and let it stew for 10 minutes. Next, add the 6 cups of water and increase the temperature. As soon as the food starts boiling, throw the rice, salt and pepper and let it boil in low temperature until it absorbs the water Add 2-3tbsps of lemon juice and stir with a fork. To serve, place it in a form, turn it over on a platter and garnish with slices of lemon or artichokes.
