It is the only same-day milk sold in the island of Tinos. In the morning it is milked from tinian cows, collected very quickly, and once it arrives in the cheese factory, it is immediately pasteurized, bottled in a paper hygienic packaging of one litre, and distributed to the shops of the island. So within three hours of its milking, it is fresh in our glass.
Its fat content is 3.6% and is only available in Tinos.
